LAVORAZIONE: Naturale Sperimentale – Raccolta delle ciliegie più mature – Analisi ed inserimento nellevasche di fermentazione per le prime 36 ore. – Dopo 36 ore il caffè viene fatto essiccare sugli African Beds. – Dopo 48 ore le ciliegie pre-essiccate vengono inserite in un essiccatore meccanico con temperatura media di 55/60°C per un tempo di 6/12 ore.
